vegas tofu broccoli rice stuff
take leftover steamed white rice, warm it up then add:
tofu, cut in 1/4" x 1/2" x 1/2" squares, fried in a bit of good veggie oil of your choice/flavor
i did it on med-low heat for about 7-10 minutes (until lightly brown on each side)
dice up some broccoli stem
throw that in with some teriyaki sauce and simmer for about another 4-5 minutes until the sauce is getting too thick, then throw some water in it, along with the broccoli crowns, stir it up, turn up the heat, and cover to steam the broccoli crowns
spoon out broccoli and tofu onto rice adding as much of the sauce as you like (very watery if you want to have a flavorful yet light dish =) ).
that's how i made it ... now you know.
peace & harmony,
elaine
